Because if like most people you have 2 or 3 email addresses registered on various website or blog, it a pain to go to each and every one of those sites and change your email to one single email, besides you migh just want that 1 website to only be able to contact you on a specific email address.
By adding additional emails to gravatar.com you get the benefit of using the same or diferent photos for all the different emils you register.
